Yia Yia’s Bakery

After success as a home business by developing a cult following with the local Greek community; Yiayia’s bakery evolved, requiring a fit-for-purpose fit out within the Gungahlin Marketplace. The bakery fit out scope of works included an inviting counter and waiting area with multiple presentation counters to house desserts, sweets, salads, meals, cakes, and frozen products. The back of house kitchen made the most of the space, including food preparation areas, ovens, sink and dishwasher, storage, coffee counter, refrigerator, and freezers. Extensive services integration was required to ensure all equipment and finishes integrated seamlessly with the design and intent. The tenancy space was 80m2 which made it difficult for both trades and materials to move freely around site, this was managed through daily rubbish removals off-site, daily trade cleans and smaller set down areas.
